Recipe for Mondo Mush
What you’ll need:

1 ¾ cups of all-purpose flour

½ teaspoon of baking soda

¼ teaspoon of baking powder

¾ teaspoon of salt

1 pinch of cinnamon

2/3 cup of sugar

1/3 cup of shortening

2 eggs
-
2 tablespoons of milk

1 cup mashed banana
-
¼ cup chopped nuts

Preheat the oven to 350 degrees.

Stir together the flour, baking powder, baking soda, salt and cinnamon. Set aside.

In a large mixing bowl, beat the sugar and shortening with an electric mixer until light, scraping the sides of the bowl often. Add eggs one at a time, then the milk, beating until smooth after each addition.

Add flour mixture and banana alternately to creamed mixture, beating until smooth after each addition. Fold in nuts.

Turn the batter into a lightly greased 8 x 4 x 3-inch loaf pan. Bake at 350 degrees for 60 to 65 minutes, or until a wooden toothpick inserted near the center comes out clean.

Cool on a rack for ten minutes, then turn upside down on a platter to remove the pan. For easier slicing, wrap in foil and store overnight—but be careful there aren’t any goblins about.
